I am gluten intolerant and can eat this flour! I had heard that Europe doesn’t put pesticides in the wheat seed like the U.S. does so I tried flour from Europe and it is true! Thank you so much!

Works well for baguettes but above 6000 ft the texture is still not quite right where as under 5000 ft it was.

I'd tried replicating the waffles and tried just about every Belgium waffle recipe I could find. The thing that was missing was using Ble flour, Lesaffre SAF yeast and THIS pearl sugar. Other brands of pearl sugar dissolves too soon in the dough. Tweek the recipe on this website by: using 1 t salt; one third T-45 and two thirds T-55; No cinnamon. Add another 1/2 salted butter.. The dough will be really sticky. After is rises to double, Beat down, add the sugar and form them into balls (blobs). Put on a greased cookie sheet and put in the fridge overnight or at least 8 hours. That gives it the rich yeasty taste. After reaching room temp cook high 1 1/2 min. Don't overcook
