  • 1/3 cup Belgian pearl sugar
  • 1 egg
  • 1/3 cup fresh lemon juice
  • 3 tablespoons melted butter
  • Zest of 1 lemon


  • Crush Belgian pearl sugar and whisk together with the egg until smooth in a microwave-safe bowl. Slowly stir in the lemon juice, butter, and zest.
  • Continue to whisk until mixture is completely smooth.
  • Cook the mixture in the microwave for one minute, then in 45 second intervals. Make sure to stir well and scrape down the sides between each cooking period.
  • Total cooking time will vary but shouldn’t last more than 3-4 cycles. The lemon curd is ready to eat when it is thick enough to coat the back of a spoon.
  • Allow the curd to thicken by letting it cool before serving.
