7-Minute Lemon Curd Recipe
With a few simple ingredients, whip up a delicious lemon curd that tastes sweet and bright in just 7 minutes. The quirk to this recipe: the curd is cooked in the microwave!
Servings: 3 /4 cup
- 1/3 cup Belgian pearl sugar
- 1 egg
- 1/3 cup fresh lemon juice
- 3 tablespoons melted butter
- Zest of 1 lemon
Crush Belgian pearl sugar and whisk together with the egg until smooth in a microwave-safe bowl. Slowly stir in the lemon juice, butter, and zest.
Continue to whisk until mixture is completely smooth.
Cook the mixture in the microwave for one minute, then in 45 second intervals. Make sure to stir well and scrape down the sides between each cooking period.
Total cooking time will vary but shouldn’t last more than 3-4 cycles. The lemon curd is ready to eat when it is thick enough to coat the back of a spoon.
Allow the curd to thicken by letting it cool before serving.
