I'd tried replicating the waffles and tried just about every Belgium waffle recipe I could find. The thing that was missing was using Ble flour, Lesaffre SAF yeast and THIS pearl sugar. Other brands of pearl sugar dissolves too soon in the dough. Tweek the recipe on this website by: using 1 t salt; one third T-45 and two thirds T-55; No cinnamon. Add another 1/2 salted butter.. The dough will be really sticky. After is rises to double, Beat down, add the sugar and form them into balls (blobs). Put on a greased cookie sheet and put in the fridge overnight or at least 8 hours. That gives it the rich yeasty taste. After reaching room temp cook high 1 1/2 min. Don't overcook

I love this flour. I bake bread almost daily, and the flour you use, is so important.

I try to bake baguettes every day for myself and my neighbors. I now only use T55 flour as its the same type of flour they use in France for baguettes. Waffle Pantry is the only site on the web that sells it at a reasonable price and has reasonable shipping. Wonderful site fast shipping. I will be back!
