French T45 flour is a soft and fine wheat flour, often referred to in French as farine de gruau or pastry flour. Imported from Europe, Francine flour is sourced from wheat that's locally grown and skillfully milled in France. With an ash ratio of 0.45% (T45) and 10% of protein, this wheat flour assures ideal fermentation and rising of a variety of doughs.

In European kitchens, T45 flour is famous for its application in viennoiseries, particularly in croissants and brioches. This is due to the fluffy, light, and flaky quality that the flour lends to baked goods. French bakers like to use T45 flour in combination with its harder parent T55 bread flour when preparing yeast-leavened dough. I ordered the farine de Ble, the instant yeast and the Belgian Pearl sugar and could not be happier! Waffle Pantry packaged everything perfectly! There were no spills or holes in any of the bags. I haven't made a cake yet but Im really looking forward to it! I also did grind the sugar so its easier to use - great idea Waffle Pantry. I thought this would be whole wheat flour but it looks, feels, and acts like all-purpose flour. Obviously, I didn't know there was a difference between "whole wheat" and "wheat flour" when I ordered it. Also, the price ($8.99) seems really high for what is essentially AP flour.

A beautiful soft flour. Although I believe this is an all purpose flour, I used it to replace my usual self rising flour in my favorite bread machine recipe. It turned out to be my best loaf yet! So soft and the flavor was amazing. I look forward to trying this in my brownie and cupcake recipe next. What a treat!
